• 10 juicy chicken breasts (approx. 200 g each), perfectly grilled or oven-baked
• Creamy satay sauce – ready-made for quick service
• 500 g roasted butternut squash wedges — sweet, soft and full of colour
• 200 g crunchy roasted pumpkin seeds for added texture
• Freshly chopped coriander for a fragrant, herbal lift
• 2–3 limes, sliced into slim wedges for a sharp citrus punch
• Extra peanut sauce for dipping or drizzling

Butterfly the chicken
Slice each chicken breast horizontally almost all the way through, then open it up like a book. This ensures faster, more even cooking and a tender result.

Grill and glaze
Grill the chicken on both sides until cooked through, then brush generously with satay sauce to lock in flavour and shine.

Warm the brioche buns
Lightly toast the buns to enhance their softness and give a delicious, slightly crisp edge.

Build the burger
Layer the juicy chicken onto the base bun, add the roasted butternut squash wedges, a sprinkle of pumpkin seeds for crunch, and finish with fresh coriander and lime wedges for brightness.
Drizzle with extra peanut sauce and serve immediately.
