Ingredients

10 vegan brioche buns

finely shredded red cabbage

Salad mix

vegan mayonnaise

chili sauce

For the tofu:

800 g firm tofu

2 tbsp maple syrup

5 tbsp soy sauce

1 tsp garlic granules

2 tsp sweet paprika powder

1 teaspoon smoked paprika powder

some chili powder

cornstarch

Preparation Instructions – Crispy Tofu Burger

Prepare the tofu
Slice the tofu into pieces approx. 1 cm thick and gently press with kitchen paper to remove excess moisture — this helps it crisp up beautifully.

Marinate for flavour
Whisk together all marinade ingredients (except the cornflour). Add the tofu and leave to marinate for at least 30 minutes — or ideally up to 2 hours for maximum flavour.

Crisp the tofu
Lift each slice from the marinade, lightly coat in cornflour, and fry in a pan with a little oil until golden and crunchy on both sides.

Warm the buns
Split the burger buns and toast the cut sides until just lightly crisped.

Build the burger
Spread the base bun with mayonnaise. Layer with red cabbage, lettuce and onions, then add the hot, crispy tofu slices.

Finish with heat + serve
Spoon over pineapple chilli sauce to taste and crown with the top bun. Serve immediately and enjoy the perfect balance of crunch and sweet-spicy heat.
