Soy-marinated mushrooms

200 ml soy sauce

1 tbsp oil

4 Portobello mushrooms
-
4–8 oyster mushrooms (depending on size)
Burger

4 Potato Burger Bun Gold, 80 g, 120 mm, sliced

200 ml Kewpie mayo
-
400 ml kimchi
-
1 handful spring onions, finely sliced
-
1 jalapeño, thinly sliced

1 handful fresh coriander

Preparation time: 20 minutes

Score a criss-cross pattern into the tops of the Portobello mushrooms.

Marinate the mushrooms in soy sauce and oil for about 10 minutes.

Fry or grill the mushrooms for 5–10 minutes, or until golden while still retaining some bite.
Serving

Spread the Potato Burger Bun Gold with Kewpie mayo and add kimchi and the mushrooms on top.

Finish with spring onions, jalapeño and fresh coriander.

Place the top bun on and serve.
Tip
Serve with root vegetable fries, sautéed green beans and toasted sesame seeds.
