Pickled cucumber
- 200 g cucumber slices
- 200 g ready-made pickling broth
- 1 g salt
Pea paste
- 200 g frozen peas, thawed
- 2 g salt
- 5 g fresh mint leaves
- 15 g olive oil
- 3–4 Vaasa small rye squares
- 150 g smoked rainbow trout
Mix the cucumber slices, pickling broth and salt in a bowl. Transfer the cucumbers to the cold to marinate for 2–24 hours. You can also use ready-made pickled cucumbers if you wish.
Puree all the ingredients for the pea paste in a blender. Spread the pea paste on the bottom and top of the bread. Pile the smoked rainbow trout and pickled cucumbers on top of the bottom. Finally, place the other slice on top to finish the sandwich.
