Matzo ball soup

The main highlight of this delicious chicken soup is the soft bread-based dumplings.
Unlike traditional Matzo ball soup recipes, the soft dumplings in this recipe are made
from fresh bread, egg, oil, and spices.
Ingredients:
- 1 onion
- 2 garlic cloves
- 1 tbsp canola oil
- 400 g chicken breast fillets
- 1.2 liters chicken broth
- 3 carrots
- 3 stalks celery
- 1 tsp salt
- Freshly ground black pepper
Matzo Balls:
- 300 g soft bread
- 1 dl canola oil
- 3 eggs
- 1 tsp dried thyme
- 1 tsp salt
- Freshly ground black pepper
To Garnish:
- 1 dl fresh dill
- Edible flowers
1. Finely chop onion and garlic, then sauté in canola oil until translucent.
2. Add sliced chicken and brown.
3. Pour in chicken broth and bring to a simmer. Cube carrots and slice celery; add to
the soup and simmer gently for about 30 minutes.
4. Blend bread and canola oil until smooth. Mix in eggs continuously. Season with
dried thyme, salt, and pepper.
5. Shape mixture into balls and add to the soup towards the end of cooking.
6. Finally, add chopped dill to the soup. Optionally, garnish with edible flowers.
